Nukazuke, or Nukamiso-zuke (lit. rice bran pickle) is probably my favorite traditional Japanese tsukemono (pickled thing). Nukazuke falls under the category of hozonzuke, or long-term pickle. Everyone’s nukazuke is different, as the nukadoko (pickling bed) varies from family to family.
